Pepperoni Pizza Soup


Matt has made this a couple of times (lucky me). It's really easy and REALLY good! The name makes it sound a little gross, but there's nothing gross about this soup.

Pepperoni Pizza Soup

2 cans condensed tomato soup

3 cups water

2 cloves garlic, minced

1 ½ cups elbow macaroni

2 green onions, sliced

2 tsp dried oregano, crushed

½ cup diced pepperoni

1 cup shredded mozzarella

1 cup shredded cheddar

Dried oregano, for garnish


Preheat broiler. In a large pan, mix soup, water, and garlic; bring to a boil over high heat. Stir in macaroni, green onions, oregano, and pepperoni; cook for 6-8 minutes or until the macaroni is almost done. Pour the soup into four ovenproof bowls (or use bread bowls). Top each with ¼ cup mozzarella and ¼ cup cheddar. Top with oregano. Broil for 3-5 minutes or until the cheese is bubbly and lightly browned.

Hey, I tried this a couple of nights ago, and we really thought it was good for a cool winter-like evening. Soups have been sounding good lately!
